Ingredients

For the crust:

  • 1 ½ cups gluten-free graham cracker crumbs
  • ⅓ cup melted butter
  • ¼ cup granulated sugar

For the filling:

  • ¾ cup granulated sugar
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • 2 ½ cups milk
  • 4 large egg yolks, beaten
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, sliced
  • Whipped cream, for topping

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a bowl, combine the gluten-free graham cracker crumbs, melted butter, and ¼ cup granulated sugar for the crust. Press the mixture into a pie dish to form the crust. Bake for about 10 minutes, then set aside to cool.
  • In a medium saucepan, whisk together ¾ cup granulated sugar, cornstarch, and salt for the filling. Gradually whisk in the milk and cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  • Temper the beaten egg yolks by gradually adding a small amount of the hot milk mixture while whisking constantly. Then, pour the tempered egg yolks back into the saucepan and continue cooking for an additional 2 minutes, stirring constantly.
  • Remove the saucepan from heat and stir in 2 tablespoons of butter and vanilla extract until smooth.
  • Layer half of the sliced bananas onto the cooled pie crust. Pour half of the filling over the bananas. Add the remaining sliced bananas, followed by the rest of the filling.
  • Cover the pie with plastic wrap, ensuring that the wrap touches the surface of the filling to prevent a skin from forming. Chill the pie in the refrigerator for at least 4 hours, or until the filling is set.
  • Before serving, top the pie with whipped cream and additional banana slices if desired.
